There's no such thing as a JailBroken FireStick. Those who claim to JailBreak a FireStick only install 3rd party apps to allow the Stick to use their software for whatever purpose they intend.

The VPN creates a tunnel between your device and the rest of the internet. This protects your data as it travels to and from your device. It also hides your IP address. With the VPN connection, your traffic goes to the VPN server first and then it’s forwarded to the rest of the web. When you jailbreak the firestick you have to download a series of different websites that could very well corrupt your server. The websites are how you get the access to the channels you want for free.
