this pot is 7-1/8 inches deep and 9- 3/8 inches wide inside diameter.

It is 9 1/2 inches when I measured it from one side to the other. Deep is 6 3/4. I hope this answer help you.

There isnt an electric pressure cooker that is able to do canning. Its a touchy process. I thought about doing that too but much research later, ill stick with my manual pressure cooker for csnning.

Electric pressure cookers are not rated for pressure canning (I don’t have this brand so can’t guve you the actual dimensions, sorry)

Has the same dimensions as the Pressure Cooker XL 8qt the inner pot are interchangeable I have both Pressure Cooker XL and this Insignia pressure cooker 8-quart. With that said you should be able to use 4 mason jars at a time. Hope this will help
