depends where the blue tooth signal originates. Apple TV is usually a separate unit or box from the cable receiver and TV. Are you using a stereo receiver for infotainment control? Does your TV broadcast the bluetooth signal your headphones are receiving, or is the Apple TV box broadcasting the blue tooth? Most cable receiver boxes don't broadcast bluetooth audio signals, though there are exceptions. Bottom line is if your Apple TV device is providing bluetooth audio then when you switch to cable the Apple tv has nothing to broadcast because the 2 devices are not sharing audio. If you're using a stereo receiver for bluetooth the cable box has to be connected to the receiver in some way, usually HDMI, but you could use RCA cable if the devices have those input/outputs . hope this helps.
