Google Fi SIM is a real sim, but they also do have the option for an eSIM, that's what I use. I just bought my pixel 3 from them and that's it... good to go. If you do end up using Google Fi, use my referral code and we both get $20 credited to our account. https://g.co/fi/r/CKNP3V
