Yes u can all u need to do is leave the ps5 in rest mode, and have a solid connection whether thats your 5G/4G connection or the hotel wifi

There are guides online if you want to do that. But the backbone app itself does offers several games you can play anywhere. They won't be your ps games, but they are games. mobile games (ex COD and fortnite)

You can play your PS5 from your hotel, but make sure you have a strong signal. Hotel wi fi is typically not strong enough for gaming, since it is split between all the guests.
