On ear sits on the ear and the over ear covers the whole ear inside it. Over ear is preferred is you want an noise cancellation device .

The over the studio (over the ear) are more stable on your head with movement. The on the ear tend to slide and move unless your wearing a hat atleast in my experience. There is no audible sound difference. It may be battery life but I sold my on the ear pair since I loved the studios much more. Hope that helps.
