• Yes, use the control panel to set what you want to cook, it will recommend what shelf to use.

• You can only start the cooking mode from the Joule oven unless using the Joule recipes. Once you start cooking, it will go through a preheat phase, depending on your cooking mode. Once preheat is finished, the oven will beep and your phone will notify you preheat is finished and cooking phase started. I think that is probably a safety feature. You can monitor time allowed and stop from your phone but you cannot adjust the temperature or time from your phone, again, a safety feature, I think. I hope this helps.
