Hi MartaK - Proof mode maintains a warm environment for rising yeast-leavened dough. During the Proof mode, the halogen oven light is illuminated to provide the warm temperature needed to help yeast rise during the proofing process. The convection fan also comes on to circulate the warm air. The oven lights and/or convection fan may cycle on and off during the Proof feature. The temperature range reached during Proof Mode is approximately 80 to 95 degrees F. WARM mode automatically heats up to approximately 175-180 degrees to keep cooked foods hot and ready to serve.
