I've had the same question on AIr Fryer clearances as well. I'm seeing a general guidance of 3-5 inches on all sides. 125 degrees F is uncomfortable to touch, but probably won't strip the paint off of drywall. I'd suggest using a IR thermometer to see just how hot the adjoining material is actually getting. A heat shield is a good step. You might consider ceramic tile on the back wall.

I have painted drywall 4" space between the exhaust and the wall and it still get so hot that you cannot touch the wall about 10" around the area. It did not damage the paint (at least not yet), but I will put a 1 sq ft of heat shield or film on that area.
