“What is the difference between the RM and RMx series? I can’t find that information. I am looking to replace a Bronze level 650 watt Corsair power supply to handle a 3080 graphics card. Thanks!”

Mainly the RMx uses high quality parts, more specifically on the capacitors. You always want to have great capacitors for high-gaming or else those can go POP! And have a dead PSU with a rare chance of taking a component with it.
