I would say max depth is 6-3/4" and max liquid level is about 6"

Sorry, there was a problem. Please try again later.The jars would probably fit, but I would stick with a conventional pressure cooker for canning, so you can monitor the pressure via a gauge, and time it manually. This would be a safer method of preserving food, especially seafood.
