You will always need to lubricate before cooking with stainless steel. Great for searing. The advantage of stainless steel is no chance of a coating chipping of and getting in your food and ultimately your body.

If you use moderate temperatures. you should not have a problem with food sticking. Don't overcook food or let is simmer too long where it would be dry causing it to stick. If preparing eggs, be careful to coat the pan with oil and use moderate temps. The utensils that come with this set are nice to use and turn eggs nicely. I was using the coated pan this morning, which worked great.
