• Damon, I can confirm that both the black out set and the colored set are both steel with plastic handles. Good product for the price, especially if obtained within the "Deal of the Day".

• Not sure of the chemical composition, but they look and behave like proper normal sharp kitchen gear. I can confidently say not plastic.

• Steel and it’s very sharp so it’s really easy to cut meat
