I’m having the same issue. Only 1440p with 60 hz or 1080p with 120hz. How do I get both enabled in my Xbox series X?

Sorry, there was a problem. Please try again later.I also have the S2719DGF and thought my Xbox was the issue. I bought the S2721DGF yesterday here and shipped here today. I can 100% confirm that it supports 1440p 120hz with the Xbox Series X. If you buy, just make sure to use the 2.1 HDMI from the Series X. Not sure but I think it only works for me with it. And Use AutoDetect in the Xbox settings, not manual HDMI... Hope that I helped
