Need? No. Desirable? Yes. with a mobile phone hotspot you'll be able to access maps from the internet which are helpful, but not necessary, for flying.

Not needed operate and fly but using you phone as a mobile hotspot will give you access to maps of an area if you have not previously downloaded them into the controller. Havin the map data is not needed to fly but can be helpful if you are trying to determine you exact location or what you may be looking at.

No, the aircraft does not need a phone for connectivity or as a display device for flying. You will need an internet connection for firmware updates and uploading flight logs, but other than that you don't need to use your phone as a hotspot. The RC Pro remote's screen is much brighter than a phone's and a lot less hassle for setting up to fly.
