“If I ask Google "what the humidity is on ecobee?" It tells me the current sensed humidity on ecobee. With these satellites, can I ask what the humidity of each one is reading for humidity or will it only tell me what the main thermostat is reading?”

Sorry, there was a problem. Please try again later.I think that they would. I have paired with my Alexa Echo and dots, announces the temp from each of my three rooms when asked. They are also paired with my iPhone through the ecobee app and reflect the temps from each room when asked. Hope this helps answer your question.
