Most color printers require the color ink cartridges be present, because they do use some color even for grayscale images (though not b/w text) printing. But some printers may, I suppose, allow them to be empty cartridges - I have no idea which may still function for b/w printing with empty color cartridges. I am pretty sure that the full answer will be model and manufacturer dependent.
