“When using this adapter, does it disable the existing Starlink wifi network?.... Or, will this add the ability to use the Starlink wifi and connect to a ethernet splitter and "hard wire" to my desktops?”

will not disable. you will need an ethernet cord to plug into this splitter, unless one is already on your splitter. and your laptop. adapter only has one Ethernet outlet, and no other outlets.
