Hello - this is Nancy at GE Appliances and I am happy to help you. Sealed burner gas ranges often have a "simmer" burner which can offer a temperature below boiling and won't ruin delicate foods or sauces. The simmer burner delivers a low setting of 140 degrees Fahrenheit which is 72 degrees below boiling. I hope this helps? Thanks for checking with us!
