Mine is brand new also and I was telling my hubby that I need to season the griddle first. I don’t know if anyone else did but any new cast iron I purchase I always season it before use. I always use a good coating crisco shortening or vegetable oil to season. I will also put it in the oven on 375 for about an hour. Since I don’t use a griddle all the time I purchased the center grate that is sold separately. Hope this helps!!

Before first use, rinse with hot water and dry thoroughly. To re-season it, heat your oven to 350F. Coat the griddle with a thin layer of oil and place it in the oven for one hour.
