Hello lvparker, Thank you for reaching out to us regarding your built-in microwave/convection oven. I'm happy to help! - Convection baking allows you to cook foods the same way as a conventional oven, using a heating element to raise the temperature of the air inside the oven. Any oven temperature from 250 degrees F to 450 degrees F may be set. A fan gently circulates heated air throughout the oven, over and around the food. Because the heated air is kept constantly moving, not permitting a layer of cooler air to develop around the food, some foods cook slightly faster than in regular oven cooking. - Conventional recipes are easily converted by reducing the temperature 25-50 degrees F. - Make sure that the food is not too large for the interior of the unit, putting too much food inside may not allow the items to properly cook. - We hope this helps. Have a great day! -Avery
