“Will the Nest thermostat tell me the actual indoor temperature, or just the target temperature? I'd be curious to know if my AC unit is able to keep up with the heat.”

It will, plus it will show outside temperature.

If you click on it, you can also see the outside temp, if you are connected to wi-fi. It will also give you a rough estimate of how long it will take to reach the desired temp, but I have not validated the accuracy of those estimates.
