That's actually two questions... "Standard induction pot/pan" - Induction cooking works by magnetically inducing a current inside of your pot or pan; that can ONLY work if your pot or pan is magnetic. All-aluminum is out, and (surprisingly) so is a lot of stainless steel (the chromium that keeps it from rusting also makes it non-magnetic). If a magnet won't stick to the bottom of your pot, it WILL NOT work with induction. There's a refrigerator magnet included with this unit so you can test. "How large a stockpot" - the depth/volume don't matter; what matters is that the whole bottom of the pot or pan needs to fit on the induction plate. Your stockpot can be as tall as you like (within reason!); as long as the bottom fits on the cooktop AND it's magnetic, you're golden.
