• Thank you for your question. The piece that sharpens is a stationary piece (similar to a whetstone) it is not plastic, so you simply draw the knife through the slot to sharpen it.

• I must admit I have NOT tried to use the Knife Sharpener on the back of can opener. I bought it for opening cans and I have other means for sharpening my knives that do not include any plastic.
