A coax connection would provide a 'live' TV signal from either antenna reception or a cable provider. You can also play audio or video files stored on an external USB drive. You could also connect the TV to a computer and use the TV as a computer monitor. What won't work without an internet connection are the 'smart' features. You won't be able to stream from NETFLIX and the like. You won't be able to load or run any of the apps. The coaxial signals and or video files are probably not in 4k resolution. So you will lose the higher resolution, streaming, and apps, which are the point of having this type of TV. It would make more sense to buy a used, refurbished, or overstock 'dumb' 1080p tv.
