S mode is a way to keep you locked into only getting apps from the official Microsoft Windows app platform. You can convert to normal windows version for free which will allow you to download your apps from anywhere in the web or via an external drive. The S Mode is supposed to be more secure as they won’t let you install any software that isn’t in the Microsoft store
