I have connected a wireless keyboard & mouse with an external monitor to the Chromebook . All three appear to be working together.

Yes! But just remember that there is only one usb port so you may want an extender since many second display monitors also require a USB port. I found a monitor that used a type c connector and that helped free up a USB port for connecting a wireless mouse and keyboard.
