Hippressurecooking.com and similar sites explain this well with charts. Top models let the user select low medium or high pressure but most will cook at the highest available pressure and control the time not temperature. Some multi-cookers offer modes of cooking and warming without pressure where the user selects the temperature. Instant Pot MAX, Ultra and Duo Evo Plus offer very fine control over temperature with digital readout of the temperature. This extra control can prevent exceeding the smoke point of your oil in saute made and prevent overcooking of delicate foods when warming or slow cooking. But many do find the basic models adequate.

Please try again later.It has different presets within the pressure cooker itself so I’m assuming that it will put the right temperature for any items that you are cooking based on the preset. For example I’ve cooked Alfredo in there before within 10 minutes and everything still came out great..
