From what I understood, it’s a spare lid gasket. Some people will use the white one for savory foods and the red one for sweets due to the gasket holding in the scent of some foods

The extra Sealing Ring that comes with your Viva model is an added bonus so that you can switch rings for sweet and savoury dishes. Plus, it's always great to have a back up! Happy Cooking!

Sorry, there was a problem. Please try again later.It is recommend to use one gasket for savory dishes and one for sweet according to the instructions supplied. However I think it can also serve as a backup as not all Instant Pot's come with two gaskets.
