Yes, you can bake cookies, the internal rack is 12"X14" so you would need something a little smaller so the hot air can circulate, and using the Convection part will make it bake evenly. One thing to know about toaster ovens is, they can bake and cook a lot of things. You just have to change your thinking about ovens.. Since there is just two of us, we use it alot more than the conventional oven.. Why heat up a oven for a frozen pizza? your not going to get a Papa Murphy's large or family size in a toaster oven, but you can fit up to a 12" pizza in one.. I like to use it for pot pies, start them in a microwave and finish them in the toaster oven, 25 min and I have the perfect pot pie
