An inverter is an electronic component that can produce a clean power wave as well as modulate it, so cooking is even. For example at 50% and inverter will reduce the power to 50 % versus a regular model the power will still be at 100% but it will be turned on and off by the transformer so the average is 50% (the cooking will not be even). If you do not use power level, the power is always at 100% which is not optimal for most foods.
