If you start the normal cycle, then pause it right away, you can hit cold wash or even change the temp and other settings. Not sure if it's the same for other settings or why you can’t change it before starting like you can with bedding, but at least it's an option!

Smart wi-fi Enabled Top Load Washer with TurboWash3D™ Technology, Model # WT7300CW has default settings that are selected automatically. You may also customize these settings using the cycle modifier buttons. All the cycles on the washer will default to a warm water temperature setting except for the Delicates cycle which defaults to a Tap Cold setting. You can use the modifier buttons to select a Cold water setting for any cycle. A chime will sound and the LED will not light if a selection is not allowed. All rinses use Tap Cold water. You can also select the ColdWash™ Technology option using the Options Button. The Cold Wash is suitable for small loads and will increase the wash and rinse times up to several minutes to maintain wash performance. It is normal for a small amount of water to remain in the dispenser compartments at the end of the cycle. However, the dispenser should not be filled completely with water. Check to make sure that the attachments in the dispenser are inserted properly. If they are not inserted properly, the will not dispense properly and water may be left in the compartment. Make sure that you are using High Efficiency (or HE) detergent if you are using powdered detergent...^IFV

My last HE top load machine (a Kenmore) did the same thing (leaving water in the soap tray). It's not a big deal to remedy. If I'm not going to be doing any more laundry, I just leave the tray pulled out to drain and dry. If I have to do more, I'll pull the tray completely out and dump the water into the tub, then replace it for the next load.
