Lrgl 5825F Convection oven is referred to as a TRUE CONVECTION Oven. LRGL is a STANDARD Convection. Standard has single or dual fans and element. Uses a fan and exhaust system. Superior to traditional oven cooking. True convection (also known as European convection) has 3 elements and 3 fans. Oven temperature is more uniform. Vastly superior baking, roasting, browning to Standard. Convection gives a crispy outer layer while inside a chicken or turkey stays juicy. Good for roasted veggies. Best for browning. Cookies., toasted nuts. Use lightweight pans made of aluminum( can be disposal) or metal. Glass and cast iron not good for convection. Read up on when to use convection because the fan blows air around and moist foods prone to shifting and splattering. (Like quick breads, custards, souffles) CAKES best in regular bake mode as these fans create a steady dry heat and the surface of foods will be dry. The front of both ranges are different . Lrgl 5823S has a full width Black oven door and a different top control panel size with different options vs Lrgl 5825F.
