You press the corresponding buttons in the top row of keys between the QWERTY keys and number pad. In my experience, they are very reliable and connect quickly. For me, #1 connects to a KVM to share MX Keys with a Mac and Windows PC; #2 connects to an iPad; #3 connects to an iPhone.

It is actually easier to switch between devices on the keyboard than with the mouse. I will say, however, that you must switch both devices individually, i.e. switch to device 2 with the keyboard then the flip the mouse over and switch to device 2. It would make sense if the two were paired and could be switched with a buttons on the keyboard.
