You are correct in your assumption, They are called plates as they are replaceable and screwed in. they are round with teeth but flat where screwed to the machine. typically one spins with the motor and the other is stationary with and adjustable gap between the two to obtain the required grind, fine or course, with the wide gap being course. Think of two coins stacked with teeth on the meeting sides.
