“If I have more than one google home device, say one in my bedroom and one in my living room and taking to someone on the phone through the speaker can i keep talking to them on all speakers if I walk into the other room or does it have to be the 1 speaker”

You can broadcast to any device connected to your google assistant!!! So theoretically you will be fine , otherwise check the google faqs
