A:Answer There was a time when canning using pressure cookers was deemed a safe method of preserving. However, since 2006 Presto has not provided information for canning in pressure cookers. The information used to support canning in pressure cookers was based on research done in the late 1970's. The current recommendation from the United States Department of Agriculture indicates that to pressure can you will need to use a vessel that is specially a pressure canner, which holds at minimum four quart-size jars. Note that pressure canners are generally 12-quart size or larger. Presto currently has 16 and 23 quart canners. We have recently introduced an electric 12 quart canner as well.
