“Where does the Charcoal filter go? The instructions show a different model that has a grill on the top and this model is flat and does not pull off as shown in the instruction booklet.”

Open the door, There is a panel on the upper part of the front while door is open. The screws are on the top of the microwave right above the panel. After unscrewing, you have to slide it to the right and it will come off. It goes in the middle with it's rear slanted up. You should have had to adjust the exhaust fan depending on if your house vents the exhaust directly outside or recycles through the charcoal filter.

Regarding your concern, the charcoal filter of the oven is vented to the inside. The charcoal filter should be replaced every 6 to 12 months and more often if necessary.
