I'm happy to help with both of these, Starlog69! First, here's a link (https://bit.ly/3jNw0rP) to the user manual for this model. Page 41 has step by step instructions on how to exit demo mode. Page 39 discusses all the features available through the options setting. The first option in the options menu is the temperature adjust feature. This feature allows you to basically calibrate the oven by adjusting the temperature controls. You can read more about this, and other features on page 40. ^Jecca
