I don't have this stove, but mine has a Sabbath mode. Most stoves turn off automatically after 12 hours. Sabbath mode is an override feature that lets you keep the oven on for longer. It's called a Sabbath mode to clue in observant Jews that they can use it to keep food warm overnight and during the day on the Sabbath when they cannot cook. However, it has nothing at all to do with what day of the week it is. If you want to cook something "low and slow" for many hours, you use this feature. It's very handy for people who like slow cooking.
