“Is this is good drive to store data (family pics, videos & docs) over a period of 5+ years? I plan to use it once or twice a year as a backup. Also, Can I disable the encryption aspect so in case something fails, I can still retrieve the data?”

Yes and yes. The encryption isn't on by default. SSDs are more reliable than the old hard drives they're replacing
