A convection oven uses a fan (and sometimes an infra-red light source) to move the heat around the food more efficiently than in a "regular" stove. It cooks faster, more evenly, and sears in the juices. And yes, it DOES make a difference - I would never buy an oven that is non-convection again. I found the best way to cook multiple items (if you have large gatherings for holidays or parties) is to have a convection stove / range below with a convection stove / microwave above it. 99% of the time you can cook an entire meal in the smaller stove/microwave unit. The smaller unit will also heat up faster - saving time and energy, it reduces the radiant heat in your house, and is less to clean up than cooking in a big stove.

Convection ovens cook things quicker and more evenly because a fan circulates the heat. If you don't have a double oven, this can be a substitute for one of them. The price is not substantially greater, and it is worthwhile. You can also save money by using this small oven instead of your larger one. This heats quicker and uses less energy.

Sorry, there was a problem. Please try again later.With any convection device you get more even distribution of heat to all sides of what ever it is you want to want to place in the "Toaster Oven". Also, from my experience the Breville use a heating technology that utilizes 5 rods located in the top (3) and bottom (2) and the programming is such that they utilize these rods for the amount of heat applied, and how many of the rods are utilized for the various applications. Yes, we struggled with the cost question, yet when we compared it to the convection ovens we have used in the past versus a standard oven we found that our baked goods were more uniformly cooked, received heat more evenly and the general overall performance is vastly better in our opinion. This was the basis that we used when making our "Convection Toaster Oven" decision. Price performance is an individual decision. We are very pleased with our "Convection Toaster Oven" by Breville.

However, the 'non-convection' is just a standard oven with "stationary" heat and does not allow for the heat to be evenly distributed in the oven.
