A:Answer A convection oven uses a fan (and sometimes an infra-red light source) to move the heat around the food more efficiently than in a "regular" stove. It cooks faster, more evenly, and sears in the juices. And yes, it DOES make a difference - I would never buy an oven that is non-convection again. I found the best way to cook multiple items (if you have large gatherings for holidays or parties) is to have a convection stove / range below with a convection stove / microwave above it. 99% of the time you can cook an entire meal in the smaller stove/microwave unit. The smaller unit will also heat up faster - saving time and energy, it reduces the radiant heat in your house, and is less to clean up than cooking in a big stove.
