We were concerned about the same thing as our old pressure cooker came with 4 pressure settings and went higher. But everything we have cooked in the pressure cooker has turned out perfect. So far not a single complaint. Our number one use is a beef tomato stew but that isn't the only thing we have done. So far it's far better than our old aluminum pressure cooker and I feel much safer with it.
A:AnswerNope, not safe for canning. Nor is it really big enough even though we got the 8qt. My wife still has her pressure cooker for canning. This just isn't designed for canning.

A:AnswerNo, there doesn't seem to be a delay start on this unit. Some other units do seem to support that feature but I can't find that in the list of features in the manual and on line it says it's not possible.
